SEAN'S FOOD TRIP: VIETNAMESE SPRING ROLL

Sean got this from a Vietnamese mate....spring rolls wrapped in rice paper. They came with peanut sauce for dipping. I am missing those too. I love fresh veggie spring rolls especially the ones made with coconut julienne or heart of palm. It is locally known as "ubod" or the soft pith of the coconut trunk. This veggie recipe is awesome whether wrapped or naked (literally unwrapped or without the crepe). :)
